Nil Desperandum: A rum revolution is brewing in Woombye

From a historic license in Woombye to producing Australia’s finest rum, the journey of Nil Desperandum, helmed by founders Matt Hobson and Michael Conrad, is a testament to Queensland spirit. 

Their certified organic molasses rum is a vivid homage to the state’s rich heritage. And with every bottle they raise the bar, making history and headlines in the distilling world.

This duo, along with Head Distiller Adam Chapman, introduced the world to ‘Sunshine & Sons’, initially charming connoisseurs with vodka and gin. Yet, it was on 22/02/2022, at precisely 2.22pm, that they unveiled a masterpiece: Australia’s premier certified organic molasses rum, ‘Nil Desperandum First’. It was a creation that showcased their relentless pursuit of excellence.

“We stand as the third-largest rum producer in Australia,” Matt said with palpable pride. “Rum is synonymous with Australia, ever since it was brought over on the first fleets. We also believe its inherently Queensland. We source Queensland-grown sugar cane and it’s harvested and milled here in Queensland too. We are one of the only certified organic distilleries in Australia.”

The name ‘Nil Desperandum’ carries weight and history. 

Rewind to 1871: James Costar received the nod to vend spirits in Woombye, dubbing his establishment ‘Nil Desperandum’ – Latin for the Aussie mantra, ‘no worries’. 

“Our rum resonates with the spirit of Australia, tracing its roots to the first fleets,” said Matt. “It’s not just Australian. It’s quintessentially Queensland  and echoing the region’s soul.”

“It captures the Sunshine Coast’s laid-back aura and pays homage to Woombye’s pioneering spirit,” said Michael.

From their flagship rum to the intriguing ‘Botanical’ – a double-vapour infused gin basket rum exuding notes of coffee, cinnamon and lime – every bottle is a testament to artistry and science. 

“It’s our dream to present Australia’s Finest Rum to the world – unadulterated, crafted only with molasses, Woombye water and wild yeast,” said Adam.

This aspiration isn’t just talk. At the 2023 Melbourne Royal Australian Distilled Spirits Awards, out of 52 medal-worthy rums, Nil Desperandum clinched medals for all nine of its entries, with ‘44 Special’ securing coveted gold.

“These accolades reveal the unmatched quality Nil Desperandum brings from the heart of the Sunshine Coast,” said Adam.

“We have a significant diversity of rum styles in oak across the board and for nine from nine entries to collect medals shows the quality we’re producing here on the Sunshine Coast.”
